Description
Our in-house craft butcher allows us to offer several craft grassfed steaks like the Picanha. The Picanha is a very prized cut of beef in Brazil, but it's relatively unknown to American butchers. This is a triangular cut from the sirloin cap of the animal with a thick, flavorful layer of fat. The picanha is excellent on the grill, fat side up over indirect heat. An internal temperature probe comes in handy here. The layer of fat melts into the meat keeping it moist and flavorful.
